I’m a snacker…big time. So my sister gave me this recipe for granola that I tried yesterday. Thank you Christa. I’m not ready to go on Top Chef but I love to try new things. I fumble my way through the kitchen and occasionally get it right. LOVE this!!!
2 cups rolled oats
1/2 cup chopped walnuts (I used walnuts and almonds)
1/3 cup honey
1/3 cup brown sugar
1/4 cup canola oil (any oil you want)
1 1/2 tsp vanilla extract
1/2 cup dried fruit (crasins, raisins, dried cherries..etc)
Combine oats, nuts and cinnamon. Simmer honey, brown sugar and oil until thick. Add vanilla. Pour over oat mixture and toss to coat. Spread on parchment paper on a baking sheet. Bake at 300 stirring occasionally for 30 mins or until crisp and brown. Cool and stir in raisins or whatever you use.
